LUX Restaurant Group adds Chiasso Coffee Cafés to mix

Third wave coffee company delivers complete coffee experience with launch of two downtown Calgary cafés

 

Calgary, Alberta  The LUX Restaurant Group, (that includes Flatiron

Restaurant & Bar and Kayne’s Restaurants), is pleased to announce that it is adding the

Chiasso Coffee Company cafés to its fast growing roster of restaurant properties. Chiasso,

a chain of third wave coffee cafés, will also serve fresh baked breads and pastries as well as

homemade soups, sandwiches, and other hot food.  LUX will open two Chiasso cafés in Calgary

before the end of summer.

 

“We believe coffee connects people,” says Adam Drybrough, a partner at LUX Restaurant Group.

“Chiasso is an ideal addition to our existing restaurant family.  We will open two Calgary cafés.

One will be located at Jamieson Place, 302 - 4th Ave. SW (between the Westin and International Hotels).

The second Chiasso Coffee café will be on the ground floor of Centennial Place 520- 3rd Ave. SW,

(Eau Claire district).

 

Drybrough adds, “At Chiasso, our aim is to enrich our guests’ experiences.  We back up great

coffee and food with exceptional people.  One of those outstanding people is LUX’s Vice-President

Scott Frank who in addition to being a Red Seal Chef has nearly two decades of restaurant and

coffee house experience.  Following a brilliant career at earl’s Restaurants, Scott became the

Operations Director for Caffè Artigiano (a 14-location third wave coffee concept), where he managed

recruiting, training and development, quality control systems, and profit control. Additionally, he

contributed to the concept development and opening of Caffé Artigiano’s Glass City Cafe in Vancouver

where he managed every aspect of the business from concept to training the General Manager

and opening team.”

What is third wave coffee?

The first wave of North American coffee culture occurred when consumers began drinking brewed

Maxwell House coffee in their homes. The second wave began in the 1960s and included everything

from ‘Double-Doubles’ at Tim Horton’s and Starbucks’ Grande Lattes to the rise of regionally

labelled coffee being offered at grocery stores. The third wave is all about the quality of the

coffee – sourcing beans from specific farms, not countries, and meticulously roasting each

bean in small batches to bring out its unique flavour. The third wave movement doesn’t just end at

selecting and roasting a great coffee bean. Chiasso’s teams of baristas go through a rigorous

training program to ensure each drink is executed perfectly. This training covers everything from

achieving the optimal temperature of the milk to extract the perfect amount of sweetness, to

perfecting the art of pouring the perfect Rosetta for your latte.
